2 Recipes with Courgette

Courgettes are 95% water. For that reason, we can certify that although it is a nutrient-dense food, it is very low in calories. It is rich in phosphorous, magnesium and calcium, making it particularly suitable for those who have a vegan diet.

We are used to adding it to purees and creamy vegetable soups, but it should ideally be eaten raw or steamed, to preserve as many nutrients as possible.

In this post, I’d like to invite you to prepare 2 courgette recipes that are really easy to make.


Creamy Courgette Soup

Prep Time 15 minutes
Cook Time 10 minutes
Total Time 30 minutes
Servings 4 Serves


  • 2 courgettes
  • 1 onion
  • 1 garlic clove
  • 6 cups of vegetable stock
  • 1 tbsp. olive oil
  • 1 pinch of salt


  • Wash, peel and dice the onion and the garlic clove.
  • In a pot, sauté them in a drizzle of olive oil.
  • In a separate microwavable container, cook the courgettes in their own juice. (Alternately, they can also be cooked En Papillote in the oven).
  • When the courgettes are done, place in the pot with the sautéed onion and garlic, and then add the vegetable stock.
  • Heat it up for 2-3 minutes and then blend until obtaining a creamy, homogeneous texture.
  • Plate it up and serve the soup.

Courgette Noodles

Prep Time 10 minutes
Total Time 10 minutes


  • 4 courgettes
  • 2 carrots
  • 4 tbsp pesto / natural chopped tomatoes
  • 1 tbsp1 olive oil
  • 1 pinch of salt
  • 1 pinch of pepper


  • Wash and use a vegetable grater to slice the courgettes and carrots. Ideally, use a spiralizer to shape the vegetables into noodles.
  • Serve the noodles obtained from one courgette and half a carrot per plate.
  • Add a tablespoon of pesto or natural chopped tomatoes to each plate, according to personal preference.
  • Season to taste, and lastly, add a tablespoon of olive oil (if necessary).
